Recipe

In a large mixing bowl, place the meat and season with cumin, salt and pepper. In a food processor, add an onion halved or quartered, a handful of parsley, and garlic cloves. Pulse until smooth or finely chopped. Add the mixture to the meat and mix well. You can make this a day ahead and let the meat marinate or grill immediately. Either way you will get juicy and tasty Middle Eastern burgers.

For the sauce: Since your food processor is already out, might as well use it again to make a delicious sauce for your burgers. It helps if your feta cheese is at room temperature before using it. We prefer high quality blocked feta that’s in a brine – this way the feta is less salty and not dry. Add the feta cheese, greek yogurt, harissa, and lemon zest into the food processor and grind until creamy and smooth.  Add additional harissa to get to your desired color and heat level. Add a large dollop to each side of the bun and patty.

Want to take it to the next level? Add quickly pickled cucumber salad: thinly sliced persian or english cucumbers, red wine vinegar, shallots, dill, and salt pepper.
