Brique a l’ouef – Egg filled fried dough

Shopping List

  • 1 sheet of spring roll dough
  • 1 egg
  • Harissa hot sauce marinade
  • Feta cheese
  • Salt and pepper
  • Vegetable oil (for frying)
  • 1 tablespoon of flour
  • 1 tablespoon of water


Heat oil in a large skillet. The oil should be hot but not steaming. Place the sheet of brick dough in a large, deep dish and break an egg in the center. Crumble the feta cheese and season with a little salt and pepper. 

Mix the water and flour together until you get a paste like consistency. Brush the perimeter of the dough and fold the sheet on itself to form a rectangle. Slide it gently into the hot oil, making sure that the egg does not escape. Fry on medium heat for 2 minutes on each side. If you do not want a runny yolk, cook for a little longer. Serve while hot with a fresh salad and spicy harissa sauce.
